We've been making these muffins daily since we opened back in 1987. The recipe is a combination of our favorites from home. We bake at least 30 dozen muffins for the shop every morning.—Anne Maher, Rockland, Maine

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup canola oil
  • 1/2 cup milk
  • 1-1/2 teaspoons vanilla extract
  • 2 cups chopped peeled apples
  • 2 cups grated carrots
  • 1/2 cup flaked coconut
  • 1/2 cup raisins
  • 1/2 cup sliced almonds

Nutritional Facts

1 serving (1 each) equals 207 calories, 10 g fat (2 g saturated fat), 36 mg cholesterol, 231 mg sodium, 28 g carbohydrate, 2 g fiber, 4 g protein.

Directions

  1. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until muffins test done. Yield: 1-1/2 dozen.

Excellent muffins for breakfast. Moist and delicious. I shared with friends. They loved it and asked for more. I will definitely make them again.

I've made these several times. They're always moist and way too good to believe they're nutritious. Soy milk actually tastes better than normal milk in this recipe.
