Zeus Burgers Recipe

Ingredients

  • 3 tablespoons fat-free mayonnaise
  • 2 teaspoons lemon juice
  • 1 garlic clove, minced
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt
  • BURGERS:
  • 1/4 cup frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup crumbled reduced-fat feta cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon pine nuts, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound lean ground beef (90% lean)

Directions

  • In a small bowl, combine the mayonnaise, lemon juice, garlic, oregano and salt. Cover and refrigerate until serving.
  • In a large bowl, combine the spinach, cheese, lemon juice, pine nuts, garlic, oregano, salt and pepper. Crumble beef over mixture and mix well. Shape into four patties.
  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear.
  • Toast buns on for 1 minute or until lightly browned. Serve burgers on buns with reserved sauce. Yield: 4 servings.

Pine Nuts

Also know as pignolia or pinon, the pine nut is the small seed from one of several pine tree varieties. They are small elongated ivory-colored nuts measuring about 3/8 inch long and having a soft texture and a buttery flavor. These burgers are very tasty. I made them with ground chicken and they were delicious. The sauce is great and some of my quests used it as a dip.

Delicious! We subbed ground turkey and added lettuce & tomato on top. The flavors are fantastic - especially the sauce.
