Weekday Lasagna Recipe
  • Prep: 35 min. Bake: 1 hour + standing

Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 small onion, chopped
  • 1 can (28 ounces) crushed tomatoes
  • 1-3/4 cups water
  • 1 can (6 ounces) tomato paste
  • 1 envelope spaghetti sauce mix
  • 1 egg, lightly beaten
  • 2 cups (16 ounces) fat-free cottage cheese
  • 2 tablespoons grated Parmesan cheese
  • 6 uncooked lasagna noodles
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, water, tomato paste and spaghetti sauce mix. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes, stirring occasionally.
  • In a small bowl, combine the egg, cottage cheese and Parmesan cheese. Spread 2 cups meat sauce in a 13-in. x 9-in. baking dish coated with cooking spray. Layer with three noodles, half of the cottage cheese mixture and half of the remaining meat sauce. Repeat layers.
  • Cover and bake at 350° for 50 minutes or until a thermometer reads 160°. Uncover; sprinkle with mozzarella cheese. Bake 10-15 minutes longer or until bubbly and cheese is melted. Let stand for 15 minutes before cutting. Yield: 9 servings.

Nutritional Facts 1 piece equals 280 calories, 7 g fat (3 g saturated fat), 65 mg cholesterol, 804 mg sodium, 29 g carbohydrate, 4 g fiber, 25 g protein. Diabetic Exchanges: 3 lean meat, 2 vegetable, 1 starch.

When I first tasted this, I thought "very, very good, but not mind blowing". Then I compared the nutritional info to all the other "low fat" lasagna recipes on TOH. When factoring in ease of preparation, time, nutrition and taste, this recipe zooms to the top as the winner. I froze the leftovers for another night and they were just as good the second time around. Also, as another reviewer mentioned, the portion size is very generous. This just became my go-to recipe for lasagna.

I didn't realize this would take so long to make when I started, so we ate really late, but it was worth the wait! I had most of the ingredients on hand already, and it was really delicious! My whole family enjoyed it. I served it with buttered bread and a salad. You'd never know there was no ricotta cheese in it! Nice-sized portion for the 280 calories, also. I'll definitely be making this again!

This recipe was excellent! Not one element was overwhelming and every bite was delicious and full of flavor. Very easy to make too!

This recipe has replace every other lasagna recipe in my collection.

I did add garlic to the sauce, salt, pepper and italian seasoning to the cottage cheese. It came out incredible. It will be the friday night dinner in our house from now on.

I made this for a family gathering, and everyone asked me for the recipe! I did use more mozerella than the recipe calls for because I put it each layer also.

I make this at least once a month, my husband and I love it very much. I follow the recipe as is but add an extra layer of lasagna noodles and cottage cheese. This is absoutely delicious!

Fairly healthy and my whole family loved it! You have to have the time for it to bake, but a VERY easy recipe to make.
