Sweet-Sour Broccoli Salad Recipe

  • Yield: 8 Servings

Ingredients

  • 4 cups broccoli florets
  • 1 cup peanuts
  • 1 cup raisins
  • 1/2 cup chopped onion
  • 1 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar

Directions

  • In a bowl, combine the broccoli, peanuts, raisins and onion. In a small bowl, combine the mayonnaise, vinegar and sugar; pour over vegetables and toss to coat. Cover and refrigerate for at least 2 hours. Yield: 8 servings

Nutritional Facts 1 serving (1 cup) equals 385 calories, 31 g fat (4 g saturated fat), 10 mg cholesterol, 240 mg sodium, 24 g carbohydrate, 4 g fiber, 7 g protein.

Don't let the high fat/calories discourage you--cut the peanuts & raisins in half and use FF mayo--still tastes delicious!
