Shred and Freeze CheeseIt’s usually cheaper to buy cheese in blocks than in shredded form. So I purchase large quantities of cheddar, Monterey Jack and mozzarella, then shred them myself in my food processor. Awesome Pizza! The bean mixture reminds me of the fire bean dip from Don Pablo's. I will definitely be making this many more times! I love this recipe

I misread the directions and put everything inside the 2 tortillas. The cheese melted and the filling was hot inside. It was good but nothing exciting. Next time I'll read the directions better - lol!

I made these with corn tortillas to lower the fat and folded it like a gordito. Everyone thought they were excellent. I did use fat free refried beans and low fat cheese. Delicious!

The Southwest Tortilla Pizzas were great for a quick meal on a busy night or anytime. My husband and I loved them. To lower the fat content, use fat free refried beans instead of the regular kind. I had 10 inch tortillas instead of 6 inch, so after they were cooked, I cut them into wedges to serve. They were great. Also, the Easy Spanish Rice was so easy to make and had a very good flavor. What a super meal!
