Pumpkin Pie Oatmeal Recipe

Ingredients

  • 1 cup water
  • 1 cup vanilla soy milk
  • 1 cup old-fashioned oats
  • 1/2 cup canned pumpkin
  • 1/4 teaspoon pumpkin pie spice
  • 2 tablespoons sugar
  • 1/4 teaspoon vanilla extract
  • Dried cranberries, optional

Directions

  • In a small saucepan, combine the water, milk, oats, pumpkin and pie spice. Bring to a boil; cook and stir for 5 minutes.
  • Remove from the heat; stir in sugar and vanilla. Sprinkle with cranberries if desired. Yield: 2 servings.

Nutritional Facts 1 cup (calculated without cranberries) equals 268 calories, 5 g fat (trace saturated fat), 0 cholesterol, 51 mg sodium, 49 g carbohydrate, 6 g fiber, 10 g protein.

We made this with regular milk and without the optional cranberries and love it. It's a nice change from regular oatmeal. If you omit the vanilla, it has a stronger pumpkin pie flavor to it, but it's good with it as well.

The pumpkin pie oatmeal is delicious. Easy to make and so good on a cold autumn morning. I only add a teaspoon of sugar, instead of the 2 tablespoons that the recipe calls for, just personal preference. I also top with a few chopped walnuts for a little crunch. Great recipe.

I liked this recipe, it just seemed to be missing something - I'm thinking about increasing the sugar by 1 T. and adding maybe a touch more vanilla next time. What a great idea though, adding pumpkin to oatmeal - the nutrition in this recipe is great!

Fantastic. I made a few changes. I make it with 1 1/2 cup of oatmeal, regular soy milk, 1/2 t salt, 3T sugar, and 1 t vanilla instead of what the recipe originally calls for.

Everyone loved this. Five friends want me to give them this recipe! I just bought some steel cut oats. Looks like for steel cut you'd need to modify the recipe to use 2 cups water instead of 1, and cook 15 min instead of 5. The pumpkin flavor is mild, but good and the texture is very creamy. Loved it.

I've made oatmeal with applesauce, nuts and apple pie spices, I don't know why I didn't think of pumpkin! I love it - and it's so easy!!!

KelRu, how did it turn out? I love steel cut, but the liquid requirements are so different, I never know how to substitute it.

I'm going to try making this using steel cut oats. I like the texture of them better.Also they seem to "stick" with you longer during the day.
