P.S. - and no bacon
I substituted sweet potato for the regular potato and Bistro Sensations Spinach w/Mozzarella chicken sausage (120 cal one link) for for the kielbasa. Excellent taste. My friends raved about it and asked for the recipe.

Potato kielbasa skillet is an excellent source of most of the vitamins we need to survive and this dish tastes very, very good. It's a keeper, for sure.

My sisters and I LOVE this dish. We make it a minimum of once a month (we get together on Thursday for a family dinner). One time we overcooked the potatoes and they were a little mushy, we decided we like it better that way. All the flavors just tend to meld together.. hehe

This was delicious. I didn't have any bacon, but I had bacon fat in the fridge and used that to saute the kielbasa and onion.

My picky kids asked for seconds and even ate the spinach! I started with 5 strips of uncooked bacon which I diced and then sauted in the pan until crisp, removed with a slotted spoon and drained off all but 1 tablespoon of the bacon fat. Instead of olive oil, I sautéd the kielbasa and onion in 1 tablespoon bacon fat. This substitution added extra flavor. Yes, I am aware that it also adds 5 calories to this dish as well as added cholesterol.
