Pink Ice Recipe
  • Prep: 10 min. + cooling
  • Yield: 5 Servings

Ingredients

  • 10 ounces white candy coating, coarsely chopped
  • 2 tablespoons crushed peppermint candies (about 7 candies)
  • 1/4 teaspoon peppermint extract
  • 2 drops red food coloring

Directions

  • In a microwave, melt candy coating at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
  • Stir in the candies, peppermint extract and food coloring. Spread onto waxed paper to cool completely. Break into small pieces; store in an airtight container. Yield: 10 ounces.

Nutritional Facts 1 serving (2 ounces) equals 312 calories, 16 g fat (15 g saturated fat), trace cholesterol, 1 mg sodium, 42 g carbohydrate, 0 fiber, trace protein.

Homemade Peppermint Ice Cream

When peppermint stick ice cream isn't available, I crush 15-20 hard peppermint candies or small candy canes and fold into a half gallon of softened vanilla ice cream. —Barb Gribble, Arena, Wisconsin

Fantastic peppermint bark. I grew up in an area that had chocolate covered wintergreen patties as well as peppermint patties. I plan to make this bark using crushed Canada mints and a few drops of wintergreen oil. Very pretty on the gift trays.
