Pineapple Smoothies Recipe

Ingredients

  • 1-1/2 cups unsweetened pineapple juice
  • 1 cup buttermilk
  • 2 cups ice cubes
  • 2 cans (8 ounces each) unsweetened crushed pineapple
  • 1/4 cup sugar

Directions

  • Combine all ingredients in a blender or food processor; cover and process until smooth. Pour into glasses; serve immediately. Yield: 6 servings.

Nutritional Analysis: 1 cup equals 133 calories, trace fat (trace saturated fat), 1 mg cholesterol, 50 mg sodium, 31 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1-1/2 fruit, 1/2 starch.

 I think buttermilk substitute can be made by using 1c milk and 1 Tablespoon vinegar... so... for lactose intolerant, i'd think you could do 1 c soymilk and 1T vinegar....

Can anything be substituted for the buttermilk, I am lactose intolerent.
