Ingredients

  • 1/2 cup pine nuts, ground
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon dill weed
  • 1/4 teaspoon lemon-pepper seasoning
  • 1 large egg
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 4 tilapia fillets (6 ounces each)
  • 2 tablespoons butter
  • Additional honey, optional

Directions

  1. In a shallow bowl, combine the pine nuts, flour, dill and lemon pepper. In another shallow bowl, combine the egg, lemon juice and honey. Dip fillets into egg mixture, then coat with nut mixture.
  2. In a large nonstick skillet, cook fish in butter over medium heat until fillets just begin to flake easily with a fork, 4-5 minutes on each side. If desired, drizzle with additional honey.

Where can you buy pine nuts?

Since pine nuts have become popular in cooking and baking, most grocery stores carry them. But because they're not really a snacking nut, they're more likely found in the baking aisle or near Italian products such as jarred pesto or sun-dried tomatoes, or even near the specialty cheeses. Other stores have them in large bulk bins sold by weight.

Can you use other kinds of nuts to make this recipe?

Don’t shy away from this pine nut-crusted tilapia recipe if you don’t have pine nuts on hand. Substitute macadamia nuts, blanched almonds or hazelnuts to keep the color light and the flavor mellow. Other mild fish filets, like orange roughy, whitefish or walleye could be swapped for tilapia as well.
