Pecan Pie Mini Muffins Recipe
  • Prep: 10 min. Bake: 25 min.
  • Yield: 15 Servings

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2/3 cup butter, melted
  • 2 eggs, lightly beaten

Directions

  • In a large bowl, combine the brown sugar, flour and pecans; set aside. Combine butter and eggs. Stir into brown sugar mixture.
  • Fill greased and floured miniature muffin cups two-thirds full. Bake at 350° for 22-25 minutes or until a toothpick inserted near the center comes out clean. Immediately remove from pans to wire racks to cool. Yield: about 2-1/2 dozen.

    Editor's Note: This recipe uses only 1/2 cup flour.

Nutritional Facts 1 serving (2 each) equals 206 calories, 14 g fat (6 g saturated fat), 50 mg cholesterol, 96 mg sodium, 19 g carbohydrate, 1 g fiber, 2 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. I cooked them for 22 minutes and they can be used for stones - I think I will start checking at 15 minutes! But- they would be delicious if they weren't so hard!

These were so good my husband would not let me take them to a family gathering! I too had a problem getting them out of the pan. I sprayed it with Pam but I think next time Pam with flour otherwise a perfect little pecan pie.

So easy to make. I've made these several times & get many compliments. Mine don't stick & I use Pam Baking Made with Flour spray. I fill my muffin tins almost completely to the top. I have made them & froze them for a couple of weeks & once thawed they still had a good texture.

These are delicious. What a great way to satisfy your craving for pecan pie without all the calories. My husband loves them. They are great with morning coffee.

This is a very ordinary muffin. It is not like a pecan pie or a decent muffin and it does stick badly to the sides and bottoms no matter how much you spray with cooking spray. A waste of good pecans. There are much better recipes than this one.

I love this recipe and have made them several times; however, I can NEVER get them to come out of the muffin tins, no matter how much I grease and flour the pans or how soon I try to get them out. If you can give me a secret tip, I'd love to be able to make these successfully.
