Pecan Apple Pancakes Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground cloves
  • 2 eggs
  • 1-3/4 cups buttermilk
  • 3 tablespoons canola oil
  • 1-3/4 cups shredded peeled apples
  • 1/2 cup chopped pecans

Directions

  • In a large bowl, mix the first nine ingredients. In another bowl, whisk the eggs, buttermilk and oil until blended. Add to flour mixture; stir just until moistened. Stir in apples and pecans.
  • Lightly grease a griddle; heat over medium-low heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Yield: 18 pancakes.

First time making these. Using a measuring cup, I actually made 24 instead of 18. Ground Clove definitely over powers the flavor of the pancakes. Will have to use less next time - perhaps half of what the recipe calls for. Definitely a good recipe for around the Christmas holiday.

I agree, it was a lot of sugar to use but I loved all the spices. I cut the apples into chunks instead of shredding and it was a great flavor! I also subbed in nutmeg for the mace.

Agreed - way too heavy on the cloves. Omitted mace with no problems - may try adding some nutmeg instead! This recipe is perfectly balanced in flavors and a wonderful texture. Will be one of our favorites for sure!

I'm really not a pancake person, but these are so de-LISH! They smell and taste like... Christmas. I think they're perfect just the way they are. It's a great combination of spices. My family and I love them with buttermilk syrup. Highly recommend this recipe.

These pancakes are delicious, but much too sweet with a whole cup of sugar, esp if you want to put syrup on top! I would try to use maybe a half cup of sugar next time. I also like to use part whole wheat flour to maximize the nutritional value. Definitely will make again, but using my alterations.
