Pea Pods and Peppers Recipe

Ingredients

  • 3/4 pound fresh snow peas
  • 1 medium sweet red pepper, julienned
  • 1/2 small onion, sliced
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 1 tablespoon canola oil
  • 1 tablespoon butter

Directions

  • In a large skillet, saute the snow peas, red pepper, onion, garlic salt and pepper in oil and butter until vegetables are tender. Yield: 4 servings.

Nutritional Facts 1 cup equals 102 calories, 7 g fat (2 g saturated fat), 8 mg cholesterol, 138 mg sodium, 9 g carbohydrate, 3 g fiber, 3 g protein. Diabetic Exchanges: 2 vegetable, 1 fat.

This was great, we had it over fish and it was really nice and fresh!

At first I was surprised at how few ingredients there were in this recipe, and I was convinced I would need to add something to it. However, it was love at first bite! So easy, so colorful, healthy and impressive! I pair it with simple baked tilapia, or turkey fried rice. I highly recommend this!!!
