Melon with Minted Lime Dip Recipe

Prep: 15 min. + marinating

Yield: 8 Servings

Ingredients

1/4 cup sugar
1/4 cup water
6 tablespoons lime juice
2 tablespoons minced fresh mint
2 teaspoons grated lime peel
2 tablespoons minced fresh gingerroot
8 cups melon balls or cubes
MINTED LIME DIP:
1 cup (8 ounces) sour cream
2 tablespoons sugar
1 tablespoon lime juice
2 teaspoons grated lime peel

Directions

In a large bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours.
Thread melon onto wooden skewers or toothpicks. In a small bowl, combine dip ingredients. Serve with melon. Yield: 8 cups fruit (1 cup dip).

Nutritional Facts 1 serving (1 cup) equals 148 calories, 5 g fat (3 g saturated fat), 19 mg cholesterol, 18 mg sodium, 23 g carbohydrate, 1 g fiber, 2 g protein.
