Meatless Hopping John Recipe

Ingredients

  • 3/4 cup uncooked long grain rice
  • 1 cup frozen corn
  • 3 medium carrots, thinly sliced
  • 1/2 cup each chopped green, sweet red and yellow pepper
  • 1/4 cup chopped onion
  • 1 tablespoon canola oil
  • 4 garlic cloves, minced
  • 1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, drained
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes

Directions

  • Cook rice according to package directions. Meanwhile, in a large nonstick skillet, saute the corn, carrots, peppers and onion in oil for 6-8 minutes or until crisp-tender. Add garlic; cook 1 minute longer.
  • Stir in the rice, peas and tomatoes; bring to a boil. Reduce heat; cover and simmer for 5 minutes or until heated through, stirring occasionally. Add the seasonings; cook 2-3 minutes longer. Yield: 10 servings.

Nutritional Analysis: One serving (3/4 cup) equals 149 calories, 2 g fat (trace saturated fat), 0 cholesterol, 313 mg sodium, 29 g carbohydrate, 4 g fiber, 5 g protein. Diabetic Exchanges: 1-1/2 starch, 1 vegetable.

Chopped Onion Substitute

When there’s no time to chop onions, onion powder is one option. Substitute 1 tablespoon of onion powder for one medium chopped onion. For the best onion flavor, use frozen chopped onions or dried minced onion (found in the spice aisle). One tablespoon of dried minced onion equals 1/4 cup minced raw onion.

This is a keeper for a meatless dish! I found this recipe a few months ago when we decided to go with more meatless meals. We love the zippy flavor and enjoy any leftovers, which are just as great the next day. We used brown rice instead for that great "nutty" flavor.

I wanted to make our traditional Hoppin' John for New Year's Day, but our guests were a vegetarian family. I remembered seeing this recipe and it sounded delicious, so we gave it a try. Since I doubled the recipe there were leftovers and the kids were eager to take them home they liked it so much. Served with vegetarian greens along side we've made this a new tradition in our home and it's so much healthier! Thanks for sharing the recipe.

Very flavorful! Made as a side dish for catfish on Fat Tuesday. Used brown rice instead, leftovers heat up nicely with a little chicken broth added to moisten. Did most of the chopping the night before to save alittle prep time. Just the right amount of seasoning results in a dish that will go with anything, or stands alone.

Although I live in the south, I had never eaten black-eyed peas for New Years until I saw this recipe and decided to give it a try. My family raved about how tasty and filling it was with all the fresh vegetables included. My daughter was especially pleased because the recipe was "meatless", and she could enjoy the dish as well. Since I have a large family, I doubled the recipe. There were plenty leftovers! Next time I do plan to add sausage. Anyone have any suggestions for adding meat?

My husband and I absolutely love this recipe! It's very healthful and leaves us feeling satisfied. It is on the spicier side for our tastes, but that is where the flavor is. It makes great left-overs for my husband to take to work for lunch the next day. Also a great way to use up left-over rice.
