Honey Chicken Stir-Fry Recipe

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 3 teaspoons olive oil, divided
  • 3 tablespoons honey
  • 2 tablespoons reduced-sodium soy sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 package (16 ounces) frozen broccoli stir-fry vegetable blend
  • 2 teaspoons cornstarch
  • 1 tablespoon cold water
  • Hot cooked rice

Directions

  • In a large nonstick skillet, stir-fry chicken and garlic in 2 teaspoons oil for 1 minute. Add the honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and no longer pink. Remove and keep warm.
  • In the same pan, stir-fry the vegetables in remaining oil for 4-5 minutes or until tender. Return chicken to the pan; stir to coat. Combine cornstarch and cold water until smooth; gradually stir into chicken mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with rice. Yield: 4 servings.

Nutritional Analysis: 1 cup stir-fry mixture (calculated without rice) equals 243 calories, 5 g fat (1 g saturated fat), 66 mg cholesterol, 470 mg sodium, 19 g carbohydrate, 3 g fiber, 28 g protein. Diabetic Exchanges: 3 lean meat, 3 vegetable.

Absolutely love this recipe!! Have made it several times and can't get enough of it. So easy! Because I haven't done much freezer cooking, could you freeze the chicken & veggies mixture (after it's all cooked up) to pull out and heat up for another day?

Just made it tonight and IT WAS JAW DROPPING, MOUTH WATERING, SO JUICY, SWEET, OMG WORDS CAN NOT DESCRIBE THE YUMMY-NESS!

MY new favorite meal!

Im 15 years old and my grandma doesnt really allow me to cook, but tonight she let me and it was sooo easy to cook. Not messy or to many ingredients. Fast and simple.

In the recipe, I just added some cauliflower, carrots, and peppers to it and it was complete! My entire family loved the meal :)

I love this recipe! I had cooked chicken to use up so I sauteed the vegetables in olive oil, added the chicken and then poured the sauce over everything. It worked great! Personally I would use equal parts of honey and soy sauce because I think it is plenty sweet. I also cut up fresh vegetables to use instead of frozen. Delicious!

I make this recipe probably twice a month! It's EXCELLENT. I've made a few changes to it though -- As others have stated, I double the garlic, honey & soy sauce. I also like to add 2 TBS of sesame seeds & 1 TSP of sesame seed oil to the chicken when I'm sauteing it. I prefer to use fresh veggies (bell peppers, onions, broccoli, snap peas & mushrooms). It takes like 7-8 minutes to stir fry them over frozen. I've used frozen before too and they're just as good! Seriously -- you won't be disappointed with this!!

This is delicious! We doubled the sauce as recommended by other reviewers and found it to be very tasty. We plan on adding some cashews the next time.
