Meet the Cook: While this is delicious grilled, I've also cooked it in the oven at 350° for an hour. Add cubed ham to it and you can serve it as a full-meal main dish. A farmer's daughter, I preferred to work in the fields instead of the kitchen. I learned cooking basics in 4-H. But mostly my education came after I was married...through trial and error! My husband and I are the parents of four children - 23, 21, 15 and 13. We live in a very rural farming area. -Margaret Hanson-Maddox, Montpelier, Indiana

I have made these many times in the oven. My family loves them. I would like to also try these on the grill. My family likes them also with green peppers on top.

This tastes just like stuffed potato skins! Unfortunately started to rain and had to cook inside. Can't wait to make it on the grill.

My husband, who loves potatoes in just about any way, shape or form, adores these. (My daughter and I like 'em too!) If your family is smaller, this is an easy recipe to halve.

My receipe is basically the same, but to make the whole thing easier, I go to the local dollar store and buy the foil 9X12 pans then cover with foil sheets. It's easier to transport to and from the grill an less messy.
