I can remember my Grandma Wheeler making these delicious muffins—we'd eat them nice and warm, fresh from the oven! She was a "pinch of this" and "handful of that" kind of cook, so getting the ingredient amounts correct for the recipe was a challenge. Now it's a family treasure!

Grandma's Honey Muffins Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup 2% milk
  • 1/4 cup butter, melted
  • 1/4 cup honey

Directions

  • In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the egg, milk, butter and honey. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Remove from pan to a wire rack. Serve warm. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 182 calories, 5 g fat (3 g saturated fat), 31 mg cholesterol, 253 mg sodium, 31 g carbohydrate, 1 g fiber, 3 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

So good! These muffins are so simple yet so great!! They are the perfect accompaniment to any meal and are so moist and not overly sweet. You do not even need extra butter! I will definitely be making these again- so yummy!!

An excellent, old fashioned, slightly sweet muffin with a delicate texture. These make a perfect accompaniment to a traditional style Sunday dinner with a roast.

I'm 8 months pregnant & NEEDED something sweet the other night. I'd been eyeing these muffins for a while in the ToH 2009 Holiday magazine for a while. They were quick & easy, which was a huge plus at a bit past midnight, and they came out AMAZING. My hubby tried to be strong & not eat anything so late, but caved after seeing my reaction. After one bite, we both fell in love. These are definitely a household favorite & will be made again many times. :D

These were pretty good. Unfortunately, my brother didn't care much for them. I thought they were good though. They were sort of gooey on the inside, but they tested done. They had a nice buttery flavor. They made a bit more than a dozen muffins.
