Elegant Pork Marsala Recipe

Ingredients

  • 5 teaspoons cornstarch
  • 2/3 cup reduced-sodium chicken broth
  • 1/3 cup whole wheat flour
  • 1/2 teaspoon pepper
  • 6 boneless pork loin chops (4 ounces each)
  • 1 tablespoon olive oil
  • 2 cups sliced fresh mushrooms
  • 1/3 cup chopped onion
  • 2 turkey bacon strips, diced
  • 1/4 teaspoon minced garlic
  • 1 cup Marsala wine or additional reduced-sodium chicken broth

Directions

  • In a small bowl, combine cornstarch and broth until smooth; set aside.
  • Place flour and pepper in a large resealable plastic bag. Add pork, a few pieces at a time, and shake to coat. In a large nonstick skillet coated with cooking spray, cook chops in oil for 4-5 minutes on each side or until a meat thermometer reads 160°. Remove and keep warm.
  • In the same skillet, saute the mushrooms, onion and bacon in drippings for 3 minutes or until bacon is crisp-tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan.
  • Stir cornstarch mixture; add to pan. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Serve with pork. Yield: 6 servings.

Nutritional Facts 1 pork chop with 1/3 cup sauce equals 232 calories, 10 g fat (3 g saturated fat), 60 mg cholesterol, 161 mg sodium, 7 g carbohydrate, 1 g fiber, 24 g protein. Diabetic Exchanges: 3 lean meat, 1/2 starch, 1/2 fat.

Okay but not special and I did not care for the after taste.

We just did not think the taste was that great.

Didn't like the turkey bacon with the pork chop. Maybe my chops were exceptionally lean, but I had no drippings in my pan at all. The bacon did not become crisp (more the texture of rubber bands!) IF I ever made this again, I would eliminate the turkey bacon all together.

This recipe was delicious. We usually have center cut chops but I purchased the boneless for this recipe and my family loved it. I did not have the wine so I used the extra chicken broth as suggested. It work well. we will certainly have this again.

This is a keeper. I only had a package of 4 pork chops, and it still worked. I had planned on leftovers, but my SO didn't leave any!

Best pork marsala ever? I'd say "absolutely!" My dad and I love this dish and make it often, mixing up the types of mushrooms just for fun!

It was delicious. I did not have the chops so I made medallions out of a pork tenderloin. Since I did not have any wine, I added about 2 Tbsp of cooking sherry to the chicken broth. I also think I would put a little salt in the flour and pepper mix. I plan to make it again!
