My kids have special diets. With so much that they can't eat, I try to fill what they can eat with the most nutrition possible. I made this meatloaf to get more veggies and vitamins. The sundried tomatoes, spinach and ground flax seeds provide healthy oils and boost their health. the sweet BBQ sauce on the outside perks it up so they gobble it down.

Ingredients

1 lb. Ground Beef
1 lb. Ground Pork
1 C. Bread Crumbs
1/2 C. Carrots, shredded
1/2 C. Zuchinni, shredded
1/2 C. Fresh Spinach, chopped
1/4 C. Sundried Tomatoes, packed in olive oil, chopped
1 C. Tomato Sauce
1 TB. Old Bay Seasoning
2 TB Ground Flax Seed
Salt and Pepper to Taste
Topping:
1 C. Ketchup
1 TB. Worchestershire Sauce
3 TB. Brown Sugar

Directions

1- Mix the first 10 ingredients in a bowl and then add the salt and pepper. Pat the meat mix into a large loaf pan lined with plastic wrap. Let it sit at room temperature for 30 minutes.
2- Meanwhile heat the oven to 350 degrees and line the bottom of a 9x13 pan with parchment paper.
3- Invert the loaf pan onto the parchment paper and remove the loaf pan and the plastic wrap from the meat leaving the meat in the shape of the loaf pan. Bake the meatloaf, uncovered, for 50 minutes. meanwhile mix the ketchup, worchestershire sauce and the brown sugar in a bowl.
4- Remove the meatloaf and heat the oven to 425. Pour the topping over the top and sides of the meat loaf. Return to the oven and bake, uncovered for an another 20-30 minutes or until a meat thermometer reaches 180. Let it sit for 15 minutes before slicing.
