Summer Harvest Chicken Salad

This fresh salad delivers a sweet-tang flavor explosion that my husband couldn't get enough of when I first made it. I put this recipe together when I had an abundance of summer fruit and leftover grilled chicken. Rotisserie chicken works well also, but my favorite is leftover Zesty Grilled Chicken from Missy Herr (previous Simple & Delicious issue). I like to serve this salad with a tall glass of lemonade and crusty bread.

Ingredients

2 lg. chicken breasts, cooked & diced
1 1/2 c. red grapes, halved
1 1/2 c. black grapes, halved
1 1/2 c. bing cherries, pitted & halved
3/4 c. blueberries
1 nectarine or peach
2 celery stalks, sliced diagonally
1/2 lg. red onion, thinly sliced
1/2 c. mayonnaise
1/4 c. horseradish mustard or spicy brown mustard
2 t. lemon juice
Fresh ground black pepper, to taste
3 large cantaloupe rings
1/3 c. slivered almonds, toasted

Directions

In a large bowl, combine chicken, fruit, celery and onion. In a separate bowl, combine mayonnaise, mustard, lemon juice and pepper. Add to chicken mixture; mix well.
Place salad into center of melon rings. Garnish with almonds.
