This is a weekly meal at our house because it is requested so often. We just chop the vegetables, stuf the chicken, and let it cook during the day- easy and oh so good and tender.

Ingredients

• 1 whole Chicken about 3-5 lbs.
• 1 Onion, chopped
• 2 C. Whole baby Carrots
• 4 Celery stalks, chopped
• 1 Tb. Poultry Herb Seasoning
• 1 Tb. Salt
• 1 tsp. Pepper
• 2 tsp. Garlic Powder
• 1 Tb. Paprika
• Olive Oil

Directions

Pre heat the oven to 250 degrees. Rinse off the chicken and pat it dry. Lay it in a roasting pan (that comes with a lid) breast side up. Rub a small amount of olive oil over the top.
In a bowl, mix the onion, carrots, and celery. In another bowl mix the seasoning, salt, pepper, and garlic. Add 1 tablespoon of seasoning mix to the vegetables. Set aside the remaining seasoning.
Stuff the chicken with half of the vegetable mix and spread the remaining vegetables around the outside of the chicken. Sprinkle the remaining seasoning and paprika over the top of the chicken.
Place the lid on the casserole dish and bake for 5 hours. Remove the lid and pre heat the oven to 400 degrees. Bake the chicken again, uncovered, for 15 minutes
