Simply Crantastic Recipe

Ingredients

  • 3 C. flour
  • 1 1/2 C. sugar
  • 1/4 t. salt
  • 1 t. baking powder
  • 2 t. pure vanilla
  • 2 T. Grand Marnier
  • 3 eggs
  • 3 yolks
  • 1 1/2 C. crannies (dried cranberries)
  • 1/2 C. almonds chopped (optional)

Directions

  • Preheat over to 375*
  • In a large mixing bowl mix dry ingredients.
  • Mix wet ingredients together and add to dry.
  • Add crannies and nuts, if using, and mix well.
  • On a parchment lined cookie sheet, shape dough into 2 logs, approx. 12"x3". Dough will be sticky so dampen hands.
  • Bake for 25 minutes.
  • Cool and then slice into 1/2" slices and rebake at 275* for 35 minutes.
  • If desired, dip end of biscotti into melted chocolate and sprinkle with finely chopped almonds. Yield: serves 0

    Notes: 

    I was a baker for a small cafe' in my town and these were always a hit.
