Peanut Butter Energy Balls (Energy Bar)

Ingredients:

  • 1/2 cup natural peanut butter
  • 1/2 cup oatmeal
  • 1/2 cup sunflower seeds
  • 1 cup raisins
  • 1 tablespoon honey (2 tbsp. honey or agave syrup)
  • 1 tablespoon ground flax seeds (optional)
  • 1 tablespoon sesame seeds
  • 1/2 tsp. vanilla extract (my addition)
  • Ground Flax optional

Directions:

1. Mix peanut butter, oatmeal, sunflower seeds, raisins, flax, sesame seeds and vanilla.
    2. Roll mixture into balls.
    3. Roll energy balls in ground flax, if desired. (optional).
    4. Let balls sit in the refrigerator for at least 30 minutes.
    5. Additional Notes:
    *Note: You can use any combination of nut butters, nuts or seeds and dried fruit as you desire, just keep the ratios the same.
   Makes 26 (1-inch) balls. (for those sugar conscious using honey they have only 1/4 tsp. of honey per ball.)
