Mommy's Corn and Pork Fritters

It's a fun way to use up that one leftover pork chop, to me it's comfort food from way back in my past when Mommy and Daddy did the cooking and I just got to eat.

Ingredients

2 cups of whole kernel corn drained reserve some of the juice*
½ cup finely diced fully cooked leftover pork chop
1/4 cup cornmeal
1/4 cup flour
½ teaspoon ground coriander
½ teaspoon chili powder
1 egg
¼ cup finely diced sweet red onion
½ cup chopped cilantro
1 teaspoon lime juice
1 teaspoon lemon juice
½ teaspoon lemon pepper
2 tablespoons oil

Directions

Mix the corn, pork, corn meal, flour, coriander, egg, onion, cilantro, lime juice , lemon juice and lemon pepper in a large bowl. If the mixture is too dry add some of the reserved liquid from the corn*.
Heat the oil in a pan to medium high heat.
Spoon the corn and pork mixture into the pan to form patties and cook until golden brown on both sides, about 4 minutes per side.
