Growing up, one of my best friends was a vegetarian. This was our favorite recipe to make when we had movie night at her house. The cream cheese adds an extra kick of flavor that even the meat eaters in my family are satisfied by!

Meatless Lasagna Recipe

Ingredients

  • 8 lasagna noodles cooked and drained
  • 16 oz cottage cheese separated
  • 8 oz cream cheese softened
  • 16 oz mozerella shredded
  • 2 eggs
  • 1/4 tsp. parsley
  • 1 tsp. basil
  • 1 jar spaghetti sauce

Directions

  • Preheat oven to 375-degrees F. In a bowl, combine cottage cheese, cream cheese, all but 1 cup of mozzarella, eggs, parsley and basil; stir together until mixture is uniform. In an ungreased 9-inch by 13-inch pan, spread spaghetti sauce in pan to cover the bottom; layer with four lasagna noodles, half the cheese mixture and half the remaining sauce. Repeat layers. Bake uncovered for 45 minutes. Top with remaining cup of mozzarella cheese and bake 5 additional minutes. Remove lasagna from oven and let sit 5 minutes before serving. Yield: serves 12
