Loaded Potato soup

I put this recipe together for my father-in-law who has throat cancer. It is one of the few foods he can eat. It makes me feel good to know I am contributing to his healing.

Ingredients

10 medium potatoes
2 quarts water
1 large onion
1 cup heavy cream
3/4 cup Real Bacon Bits, divided
2 cups Mild Cheddar Cheese, divided
1/2 tsp salt
1/4 tsp pepper
1 cup sour cream

Directions

Dice onion and sweat in a large pot over medium low heat 10 minutes or until tender. Remove from heat. While onion is sweating peel and thinly slice potatoes. Add to the pot cover with 2 quarts water (or just enough to cover potatoes with 1/2 inch over). Bring to a low boil and cook until potatoes are tender, about 15 minutes. Reduce heat to low. Using a potato masher mash the potatoes until soupy with as much or as little "lumps" as you like. Add 1/2 cup bacon, salt and pepper. Temper cream by placing a ladel of soup in a bowl then adding the cream, stir. Add this to the soup and stir. Add 1 1/2 cups cheese and stir. Remove from heat. Ladle into bowls and garnish with, a dollop of sour cream, cheese and bacon.
