HAWAIIAN COLE SLAW Recipe

Ingredients

  • 8 cups shredded cabbage
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • 2 tablespoons orange juice
  • 2/3 cup low fat mayonnaise
  • 1 can (11 oz.) mandarin oranges drained
  • 1 can (8 oz.) pineapple tidbits drained
  • 1 cup shredded coconut

Directions

  • Combine cabbage, salt, pepper, ginger, nutmeg, orange juice, and mayonnaise; mix well. Add mandarin oranges, pineapple, and coconut; toss gently. Cover and chill 1-2 hours. Yield: serves 8
