Ingredients

  • 1 clove garlic minced
  • 2 Tablespoons olive oil
  • 2 (14 1/2 oz)cans diced tomato with basil garlic and oregeno
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh parsley
  • 3 Tablespoons lemon juice
  • 7 oz whole wheat spaghetti cooked
  • 1 cup crumbled feta cheese
  • 1 (4oz)can sliced black olivesdrained
  • Garnishes: lemonslices green onions fresh parsley sprigs

Directions

  • Saute garlic in hot oil in large nonstick skillet. Add tomatoes and next 3 ingredients; saute 2 minutes or until thoroughly heated.
  • Toss together tomato mixture, hot cooked pasta, cheese, and olives. Serve immediately; and garnish if desired. Yield: serves 0

    Notes: 

    I add some crushed red pepper along with the tomatoes to add a little zip.
