Easy Apple Cake
As a boy, my DH's family was stationed in Washington. My mother-in-law would make this wonderful treat when the apples were abundant. Hurricane Katrina washed all her cook books and recipes away. I wanted to give her a treat for Easter, the cake prepared in a 13 X 9 pan and cake taker with a copy of the laminated recipe. I went to the Community of TOH and asked for such a recipe and was blessed with this recipe. Thanks to Linda.

Ingredients:
- Easy Apple Cake
- 2 eggs
- 1 cup oil
- 2 cups all purpose flour
- 1 cup brown sugar
- 1 cup white sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/4 tsp cinnamon
- 1/2 tsp apple pie spice
- 1/8 tsp nutmeg
- 5 cups peeled diced apples
- 1/2 cup sour cream
- 1/2 cup walnuts

Directions:
Preheat oven to 350 degrees and grease and flour 9x13" pan.
Combine eggs and oil. Whisk until foamy.
Mix flour, sugars, baking soda, salt, cinnamon, apple pie spice, and nutmeg in a separate bowl. Add to egg mixture, blending thoroughly.
Add apples and mix until blended.
Fold in sour cream and walnuts.
Spread into prepared pan.
Bake for 25-30 minutes, or until toothpick inserted in center comes out clean.
Sprinkle with powdered sugar to serve.
