Cucumber Marmalade Recipe

This is a lime-flavored maramalde that is cool as a cucumber. It makes a great gift. I found the recipe in a small cookbook. I wanted to do something different with cucmbers besides making relishes and pickles.

Cucumber Marmalade Recipe

Prep: 40 min. Cook: 7 min.

Ingredients

2 c. grated cucumber
4 c. sugar
1/2 c. freshly squeezed lime juice
1/4 c. grated lime peel
3 oz. liquid pectin

Directions

In a large pot, combine cucumber, sugar, lime juice and lime peel. Bring to a boil over high heat, strring constantly. Let boil 1 minute. Remove from heat. Quickly add liquid pectin; mix thoroughly. Skim aff foam. Ladle into hot sterilized jars, leaving 1/4-inch head space. Wipe rims and adjust caps. Process on boiling water bath 5 minutes. Makes about 36 oz. Yield: serves 0
