Cowgirl Casserole

This is a all time favorite comfort dish. Very easy to put together and very low cal. Add a nice salad and dinner is ready.

Ingredients

1 medium onion, chopped

1 cup diced carrots

1 red bell pepper, diced

1 cup fresh or frozen green beans, cut into 1/2 inch pieces

1 cup canned or frozen corn, drained if canned

1 15oz can vegetarian baked beans

1 tsp barbecue seasoning or barbecue sauce

1 Tbsp ketchup or tomato paste

3 oz smoky cheddar or smoky Edam cheese, diced or shredded

Directions

Heat oven to 375. In a non-stick skillet, sauté the onions, carrots and pepper until soft but not browned. Add the green beans and cook 5 minutes. Stir in the corn, baked beans, seasoning and ketchup. Cook 2 minutes until heated through. Pour into a baking dish and scatter the cheese on top. Cover and bake for 30 minutes until the casserole is bubbling and the cheese has melted.
