Chili con Queso Bites

A friend online shared this with me, and I've made it for brunch potlucks, as well as just for us here at home. They freeze well and make a quick grab and go breakfast treat, hot from the microwave.

Ingredients

4 eggs
1/2 c. chunky salsa
1/4 c. all-purpose flour
2 tsp. chili powder
1 1/2 c. shredded Cheddar or Jack cheese (6 oz.s)
1 green onion, chopped (about 2 tsp.)

Directions

1. Preheat oven to 400 degrees. Grease 24 (3-inch) muffin-pan cups. Set aside.

2. In medium bowl mix eggs, picante sauce, flour and chili powder. Stir in cheese and onion.

3. Spoon about 1 T. cheese mixture into each cup. Bake 10 minutes or until golden brown. Serve warm or at room temperature with sour cream and additional salsa, if desired.
