This doesn't have fruit or nuts, but it is my favorite way to have chicken salad. Served on top of those Garden Herb Triscuits is my favorite way to eat it

Ingredients

  • Four to five boneless skinless chicken breasts boiled for about 15 minutes or until all pink is gone
  • 1 medium red onion chopped fine
  • 2 to 3 celery stalks chopped fine
  • Sweet pickel relish probably about 1/2 cup with some juice out of the jar
  • Mayo probably 1/2 to 1 cup depending on how moist you want your salad
  • Salt
  • Pepper
  • Paprika

Directions

  • Chop the chicken up into fine pieces in a food processor or blender. Chop onion and celery into small pieces also. Combine chicken, onion and celery. Add sweet relish with some of the juice out of the jar. If you don't like sweet pickels, you can leave it out, but it tastes bland to me that way. Then add mayo until it looks moist enough. Mix well. Add salt, pepper, and paprika to taste.
  • You could add boiled eggs to this if you liked (I don't), or cilantro, which a friend of mine does, but since I turned a chicken salad green with it once, I don't use it anymore.....:) Yield: serves 0
