This recipe is very special to me. It came from my grandma . (Which I never met.) During World War 1 my grandma came over from Scotland to Canada, & this recipe was very popular in "Canada". Because it was so hard to get eggs ,milk &butter during the war. It has a wonderful smell. It's something my Mom made during Christmas time. Now I also make it !

Canada War Cake Recipe

Ingredients

  • 2c.Brown Sugar
  • 4TBSP. shortening
  • 1tsp.cloves
  • 2c.hot water
  • 1tsp.cinnamon
  • 1tsp.salt
  • 2c.Raisins(I have used dried cranberries)
  • 1c.chopped walnut or pecans

Directions

  • In a large saucepan add above ingr ;boil 5min. Cool about 1 hour.Add 3c. flour & 1tsp baking soda dissolved in 1tsp.water.
  • Add chopped nuts before placing in 1 grease & flour
  • Bread pans. Bake 375* for 1 hour. Yield: serves 0

    I always double or triple this recipe because my whole family loves it.

This is the same as my recipe that came from my grandmother as well. Very popular here in the Maritimes. At Christmas I add 1 cup small diced mixed fruit( pineapple, red and green cherries). Batter is very thick. I bake it in a tube pan or loaf pans at 325* Makes an easy inexpensive fruitcake that the whole family loves.
