Can Cun (Crabmeat Enchiladas)

I used to order something like this at Chi Chi's. I found this recipe from a newpaper clipping a long time ago. My family enjoys this dish. - Eve Noveskey (Adrian, MI and Cantonment, FL)

Ingredients

5 imitation crab legs, cut into pieces

1 c. Monterey Jack Cheese

2 Tbsp. minced onions

1/2 tsp. dill weed

2 Tbsp. butter

1 1/4 c. milk

2 Tbsp. flour

Salt to taste

Pepper to taste

2 Tbsp. corn oil

4 flour tortillas

Directions

In medium bowl, combine imitation crab pieces, onion, and dill. Set aside. In small saucepan, melt butter. Stir in flour, add milk stirring until sauce becomes thick and smooth. Season to taste with salt and pepper. Remove from heat and add a few Tbsp. of sauce to crab mixture- just enough to make mixture stick together. Set rest of sauce aside. In medium skillet, heat corn oil. Add tortilla 1 at a time and cook until soft. Drain on paper towels. Place 1/2 of crab mixture in the center of tortilla and roll. Place a little sauce on baking dish, then tortillas, seam side down. Spread rest of sauce on top. Bake at 350 degrees for 20 min.
