Berry Bonanza Recipe

Prep: 10 min. Cook: 26 min.

Yield: 12 Servings

Ingredients

2 cups all purpose flour
1 cup sugar
2 t. baking powder
1/2 t. salt
1/2 cup milk (I use 1%)
1/2 cup unsalted butter melted & cooled
1 egg slightly beaten
1 t. pure vanilla
2 cups blueberries (I use frozen but fresh is fine)

Directions

Preheat oven to 400*
Line 12 muffin cups or grease cups.
In a large mixing bowl combine the dry ingredients.
In another bowl, stir together the remaining ingredients except the blueberries.
Make a well in center of dry ingredients and add the wet ingredients. Stir just to combine.
Stir in blueberries by hand.
Spoon batter into prepared muffin cups (I always use an ice cream scoop; it's easier and the muffins come out uniform).
Bake for 25-26 minutes.
Use a cake tester to check if done.
Cool 5 minutes before removing muffins from cups.
These muffins freeze well. Yield: serves 12

Notes:
I've been making this recipe for a really long time.
My husband says there is just enough batter in each muffin to hold all the blueberries!
This is a muffin that I make if I know company is coming. Actually I double the recipe if company is coming!!
