I first tasted this recipe while volunteering at a Christian camp. I loved it and made sure I brought the recipe home. Everywhere I have brought it, I have gotten compliments and requests for the recipe! These bars have a light shortbread-type crust, and a not-too-sweet filling. This actually tastes better the day after you make it, so it's great for the holidays. To make it in large quantities, just triple the amounts and bake in 2 15"x10"x1" pans. Works great for crowds!

Ingredients

1 c. butter, softened
1 1/3 c. plus 1/2 cup sugar, divided
1 1/2 tsp. vanilla extract, divided
2 c. flour
2-(8oz.) pkgs. cream cheese, softened
2 eggs
1 tsp. cinnamon
8 c. peeled and thinly sliced apples
1/2 c. slivered almonds

Directions

In small mixing bowl, combine butter, 2/3 cup of the sugar, and 1/2 tsp. of the vanilla. Beat with electric mixer until light and creamy, about 5 minutes. Blend in flour. Pat dough into bottom and 1" up sides of ungreased 9"x13" pan. Set aside. In large mixing bowl, beat cream cheese and 1/2 cup of the sugar. Mix till well blended. Beat in eggs and remaining 1 tsp. vanilla. Pour into pastry-lined pan. Set aside. In large bowl, combine remaining 2/3 cup sugar and cinnamon. Add apples and toss gently to coat. Arrange apples over cream cheese layer; sprinkle with almonds. Bake at 450 degrees for 10 minutes. Reduce heat to 400 degrees and bake 25 minutes longer. Cool completely. Cut into bars. Store in refrigerator.
