Banana-Bran Cereal Muffins

These flavorful muffins are so simple to prepare, and a good source of fiber. Save that "last banana"---that is all this recipe needs!

Ingredients

1 cup whole-bran cereal
2/3 cup milk
1 large ripe banana, mashed
1 egg, beaten
1/4 cup canola oil
1 1/2 cups flour
1/2 cup packed brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves

Directions

In a large bowl stir together cereal, milk and banana.
Let stand 2 minutes or until cereal is soft.
Add egg and oil; mix well.
In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and cloves.
Add dry ingredients to bran mixture, stirring only until mixture is moistened.
Spoon into twelve greased (or paper-lined) muffin cups.
Bake in a pre-heated 375F oven 25-30 minutes, or until golden brown.
Serve warm.
