As I started to make meatloaf for dinner, I discovered I had run out of ketchup (a staple for meatloaf) meaning it was time to improvise. Knowing how much my boys love bbq cheeseburgers - this seemed like a perfect combination!

BBQ Cheeseburger Meatloaf Recipe
  • Prep: 15 min. Cook: 60 min.
  • Yield: 4 Servings

Ingredients

  • ½ cup milk
  • 1 cup bread crumbs
  • ¼ cup Honey BBQ Sauce (any BBQ sauce would work)
  • 2 eggs beaten
  • 1 lb of ground beef
  • 1 cup shredded cheese (I used a pizza blend but shredded cheddar would be fine)

Directions

  • Preheat oven to 350º
  • Combine first four ingredients, crumble ground beef over mixture and add shredded cheese. Mix lightly, just so everything is incorporated. Form loaf on a foil lined, rimmed baking sheet.
  • Bake uncovered for 40 minutes, top with additional BBQ sauce and bake another 15 minutes, top with more shredded cheese if desired & bake until cheese is melted..5 or 10 minutes should do it. Remove from oven & let rest 4 -5 minutes...slice & enjoy Yield: serves 4

    Notes: 

    This produces a very nice, moist meatloaf with great flavor!
