Apple-Orange Raisin Spice Cake Recipe

Ingredients

  • 1 c. all-purpose flour
  • 1 c. whole flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. nutmeg
  • 1/3 c. dark raisins
  • 1/2 c. chopped walnuts
  • 3/4 c. frozen apple juice concentrate thawed
  • 3/4 c. sugar substitute
  • 1/2 c. egg whites or liquid egg substitute
  • 1 1/2 c. canola oil
  • 1/2 c. + 1/2 tsp. orange juice concentrate thawed
  • 1 tsp. vanilla extarct
  • 4 c. peeled cored sliced apples
  • 1/3 c. orange marmalade

Directions

  • Preheat oven to 350 degrees. Generously coat 12-cup Bundt pan with cooking spray.
  • In a medium bowl, sift together dry ingredients; add raisins and nuts, tossing to coat.
  • In a large bowl, combine apple juice concentrate, sugar substitute, oil, 1/2 cup orange juice and vanilla. Add flour mixture and stir just until moistened. Fold in apples. Pour into prepared pan. Bake 1 hour; cool 10 minutes in pan. Remove from pan to wire rack.
  • In small saucepan over low heat, heat marmalade until melted; add remaining 1/2 tsp. orange juice stirring to blend. Drizzle sauce over warm cake; cool completely. Yield: serves 0

    Notes: 

    Toast the walnuts to bring out their flavor.
