My husband Larry is the one that makes this cake. He received the recipe from a co-workers wife who use to make it and bring it into work. Larry would fill out a purchase order whenever he wanted Doris Nelson to make one!
Ingredients
1 C. canola oil
2 C. sugar
2 eggs
2 C. flour
1 t. cinnamon
1 t. baking soda
1/2 t. salt
1 t. vanilla
1 C. chopped walnuts - toasted
4 C. diced, peeled apples - (3 apples)
Directions
Preheat oven to 350*.
Grease a 10x14 pan and set aside.
Combine sugar and oil and mix well. Add eggs one at a time and beat well.
Combine dry ingredients and add to sugar mixture.
Pour batter into prepared pan.
Bake for 40-45 minutes.
When cooled frost with your choice of cream cheese frosting or powdered sugar frosting. Sprinkle with toasted coconut.
