Chocolate-Strawberry Celebration Cake Recipe

Ingredients

  • 1 package chocolate cake mix (regular size)
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 4 eggs
  • 1 cup (8 ounces) sour cream
  • 3/4 cup water
  • 1/4 cup canola oil
  • 4 ounces semisweet chocolate, melted
  • FROSTING:
  • 2 cups butter, softened
  • 4 cups confectioners' sugar
  • 3/4 cup baking cocoa
  • 1/2 cup 2% milk
  • GARNISHES:
  • 2 ounces semisweet chocolate, melted
  • 1 pound fresh strawberries, hulled
  • GANACHE:
  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup heavy whipping cream

Directions

  • Combine the first seven ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Transfer to two greased and floured 9-in. round baking pans.
  • Bake at 350° for 28-32 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • In a large bowl, cream the butter, confectioner's sugar and cocoa until light and fluffy. Beat in milk until smooth. Spread frosting between layers and over top and sides of cake.
  • Pipe or spoon melted chocolate onto waxed paper in decorative designs; let stand until set. Arrange strawberries on top of cake.
  • For ganache, place chocolate in a small bowl. Heat cream just to a boil; pour over chocolate and whisk until smooth. Drizzle over top of cake, allowing ganache to drape down the sides. Top with chocolate garnishes. Yield: 12 servings.

I have made this several times and it is excellent! I've made both cupcakes and cakes using this recipe...the only problem i have is that the cake always falls once i remove it from the oven...does anyone else have this problem? I tried lowering the oven temp to 325 and baking it a few minutes longer but it still falls...any suggestions?

Love, love, LOVE it!!!! only change I would make is using Chocolate Mouse for icing, color and taste work perfect with the rich Ganache!! remember, DON'T put the piped swirls in the freezer to set them, they will be too soft at room temp.

I have been making this cake for over a year now. Lets just say anytime one of my kids or nieces or nephews have a birthday coming up they ALWAYS request I make this. I have doctored it occasionally substituting strong coffee for the water, & 1 TBL of coffee liquor & 1 tsp of instant coffee grounds to the cake part. I have also added the liquor to the frosting & ganache. I don't drink coffee myself but it really brings out the chocolate flavor! I have also substituted the strawberries with raspberries if they look better at the store, I have also added raspberries in between the layers & I have chocolate dipped them on occasion to change it up a bit. Once you make this you will make it again~ Enjoy!

I first had to make this cake for a christmas party. People loved it and I have been making it ever since. For the past couple years everytime someone has a party they call me for this cake. It is delicious. Very rich. Easy to make and it looks like it takes forever. I haven't met anyone who dislikes this cake.

My family loves this cake. I have made it for birthdays and as a grooms cake. I wish I would have thought to dip the strawberries first, because that was my only complaint-that the berries release their juices when they touch the frosting. I will continue to make this cake...fantastic

This is the most chocolate you can get in 1 recipe. My husband doesn't like chocolate, chocolate, chocolate anything, but he loved this cake. the cake it's self was so moist and the frosting I now make anytime I want choclate frosting. I've made this cake for a baby shower, and my church, everyone who tries it loves it.

Not giving it 5 stars because the frosting is just too much for this cake - too sweet (and trust me, I love chocolate!). I put this in a bundt pan and drizzed the ganache over the top. Used the berries as a side garnise as well. No need for the other frosting - was amazing without. And, much simpler!!
