Chocolate Mint Wafers Recipe
  • Prep: 20 min. + standing
  • Yield: 18-24 Servings

Ingredients

  • 4 ounces dark chocolate candy coating
  • 1/8 to 1/4 teaspoon peppermint extract
  • 18 to 24 vanilla wafers

Directions

  • Place candy coating and extract in a microwave-safe bowl. Microwave, uncovered, on high for 30-60 seconds or until smooth, stirring every 15 seconds.
  • Dip vanilla wafers in coating; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container. Yield: about 1-1/2 dozen.

Just like girl scout cookies.

Another option is to mix in peanut butter instead of mint. Amazing!

These were great! My husband ate them all that night, and said they were just like the girl scout cookies.

I didn't feel like hunting the grocery stores for dark chocolate candy coating, so I used semi-sweet chocolate chips. They are okay, but I'm not impressed. Maybe they would be better with the candy coating it calls for.
