Chex® Pumpkin Pie Crunch Recipe

Ingredients

  • 1/4 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1/4 cup butter
  • 2 teaspoons vanilla
  • 2 cups Cinnamon Chex® cereal
  • 2 cups Wheat Chex® cereal
  • 2 cups Honey Nut Chex® cereal
  • 8 oz pecans

Directions

  • In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated.
  • Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container. Yield: 16 servings (1/2 cup each).

A bit hit! I usually make traditional Chex mix for Thanksgiving, but this year we decided to make non-traditional recipes for the traditional entrees (i.e. garlic mashed potatoes for regular whipped potatoes). Everyone loved this Chex mix and it may turn into a new Thanksgiving tradition.

Have made this twice in 2 weeks, & will make again & again! My new favorite "sweet" mix, took to work & had to make 10 copies of the recipe. Used Cinnamon toast crunch, Rice & Wheat Chex cause that's what I had on hand, also mixed nuts instead of just pecans, turned out just delish!

easy and quick. I couldn't find cinnamon chex at my store so I used corn chex and added cinnamon with the brown sugar mix. Also added mini chocolate chips

This turned out great! I added Mini Nilla Wafers to it (and made a little extra butter and sugar mixture) and then I added marshmallows after it cooled to complete the whole pumpkin pie feel with whipped cream on top!
