Buttery Sweet Potato Casserole Recipe
  • Prep: 15 min. Bake: 20 min.
  • Yield: 6-8 Servings

Ingredients

  • 2 cans (15-3/4 ounces each) sweet potatoes, drained and mashed
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1/2 teaspoon ground cinnamon
  • Dash salt
  • TOPPING:
  • 1 cup coarsely crushed butter-flavored crackers (about 25 crackers)
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted

Directions

  • In a large bowl, combine the first six ingredients. Transfer to a greased 8-in. square baking dish. Combine the topping ingredients; sprinkle over sweet potato mixture.
  • Bake, uncovered, at 350° for 20-25 minutes or until a thermometer reads 160°. Yield: 6-8 servings.

I've made several different sweet potato recipes over the years but this is by far the best!! I have 5 sons who don't particularly care for sweet potatoes but they all LOVED this dish. I tripled the recipe but only doubled the sugar to 1 cup (any more would've been way too sweet). This will definitely be a new Thanksgiving staple.

Fast, easy, and everyone loved it - will DEFINITELY make again! Used Flip Sides Pretzel Crackers (Reduced Fat) and a few chopped pecans on top.

Wow, mine was swimming under butter. I must have done something wrong. Flavor was excellent, but too sweet for me. Sorry.

it's actually the most requested recipe! I make it with flipside crackers (pretzel on one side) my family & friends love, love, love this recipe!
