Ranch dressing mix flavors this fast-to-fix mixture that’s packed with shredded cheese. “This thick dip is made to go with pretzels,” assures Michelle Long of New Castle, Colorado. “It’s one of those snacks that when you start eating it, you can’t stop! This dip can be made with any type of beer, including nonalcoholic beer. I’ve taken it to many parties and am always asked for the recipe.”

Ingredients

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/3 cup beer or nonalcoholic beer
  • 1 envelope ranch salad dressing mix
  • 2 cups (8 ounces) shredded cheddar cheese
  • Pretzels

Directions

  • In a large bowl, beat the cream cheese, beer and dressing mix until smooth. Stir in cheddar cheese. Serve with pretzels. Yield: 3-1/2 cups.

I made this for Super Bowl in 2011 and it was a big hit. It does make quite a bit of dip. Thanks for sharing this recipe; we will be having this again for Super Bowl 2013.

I made this dip a couple years ago for an office party. It was very good and a huge hit. Wasn't any left. I don't recall how "stiff" it was. Curious as to how well it would hold up as a cheese ball? Anyone tried it?

This dip was easy to make, and easy to transport to a picnic. The second time I made it I added real bacon bits to it. Everyone loved it.

My husband and i both love it. It has a cheesy ranch flavor followed by a pleasant beer flavored after- bite. Make it a day ahead for best flavor. It goes well with pretzels or bagel chips.

Served this at my Super Bowl party this past January. Easy to put together and very tasty. Definitely serve with pretzels..the saltiness goes so well with the creaminess of the dip.

I make this same recipe but I add 2 strips of cooked diced bacon, and about a 1/2 tsp. of minced garlic to give it that extra kick. Also use a little bit of sour cream. This is one of those once you start you just don't stop eating recipes. The longer it stays in the fridge, the stronger the beer flavor gets.
