My family truly loves this recipe. We don't fry foods much anymore and prefer to barbecue, so I adapted my mother's recipe for barbecue sauce to suit our tastes. Every summer, we have a neighborhood cookout. I take this chicken and watch it disappear! —Linda Scott, Hahira, Georgia

Barbecued Chicken Recipe

Ingredients

  • 2 broiler/fryer chicken (2 to 3 pounds each), cut up
  • SEASONING MIX:
  • 3 tablespoons salt or salt substitute
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 1-1/2 teaspoons chili powder
  • 1-1/2 teaspoons pepper
  • 1/4 teaspoon ground turmeric
  • Pinch ground red pepper
  • SAUCE:
  • 2 cups ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons dried minced onion
  • 2 tablespoons thawed orange juice concentrate
  • 1 tablespoon Seasoning Mix
  • 1/2 teaspoon Liquid Smoke, optional

Directions

  • Pat chicken pieces dry so seasoning coats well; set aside. Combine seasoning mix ingredients; sprinkle generously over both sides of the chicken. Set aside 1 tablespoon mix for sauce and store leftovers in a covered container.
  • Grill chicken, skin side down, uncovered, over medium heat for 20 minutes. Turn; grill 20 to 30 minutes more or until chicken is tender and no longer pink.
  • Meanwhile, combine all sauce ingredients in a small bowl. During the last 10 minutes of grilling, brush chicken often with sauce. Yield: 12 servings.

Nutritional Facts 1 serving (1 each) equals 152 calories, 5 g fat (1 g saturated fat), 29 mg cholesterol, 2,275 mg sodium, 18 g carbohydrate, 1 g fiber, 10 g protein.

This was delicious! I used a family pack of bone-in chicken breasts with the skin off, with the weight equaling the same as the two fryer chickens. They worked very well. I just love the extra flavor the seasoning rub adds to an already delicious sauce. I did omit the turmeric since mine was pretty old and we don't care for it anyway. Followed everything else exactly. The chicken was very tasty! I served it with homeade macaroni salad and King Hawaiian rolls. I will definitely make this again soon. Thanks!
