Ingredients

  • 2 cups uncooked elbow macaroni
  • 5 green onions, finely chopped
  • 1 large tomato, diced
  • 1-1/4 cups diced celery
  • 1-1/4 cups mayonnaise
  • 5 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 to 1/4 teaspoon pepper
  • 1 pound sliced bacon, cooked and crumbled

Directions

  • Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the macaroni, green onions, tomato and celery. In a small bowl, combine the mayonnaise, vinegar, salt and pepper. Pour over macaroni mixture and toss to coat. Cover and refrigerate for at least 2 hours. Just before serving, add bacon. Yield: 12 servings.

Nutritional Analysis: 3/4 cup equals 290 calories, 25 g fat (5 g saturated fat), 19 mg cholesterol, 387 mg sodium, 11 g carbohydrate, 1 g fiber, 6 g protein.

This salad is excellent. Everytime I make it I receive compliments and requests for the recipe. Everything is better with bacon !!!!

I get many requests to bring this salad to potlucks and even wedding receptions!! My secret: I substitute 2 large handfuls of cooked mini shrimp for the bacon--everyone thinks they're being treated like royalty!

I have been making this recipe for many years now. I have been told that I can't come to summer parties w/o this salad. It is a family favorite & whenever I introduce it to a new group of people, they beg for the recipe. This one's fantastic!

I took this to a church potluck and didnt get much reaction at all. My husband taste tested it for me before I took it and he said it tasted like macaroni with mayo on it. Neither of us could understand why the name was blt when it tasted nothing like that. We love macaroni salads but this one wasnt the least bit impressive. Had much better.

Very good! Word of advice - 12 servings = 6 if you have big eaters.

This is my favorite Macaroni Salad, it's so yummy! I use green peppers instead of celery, it's a crowd pleaser! I make it several times during summer time.
