BLT Bites Recipe
  • Prep: 30 min. + chilling
  • Yield: 14 Servings

Ingredients

  • 28 cherry tomatoes
  • 7 bacon strips, cooked and crumbled
  • 1/2 cup fat-free mayonnaise
  • 1/3 cup chopped green onions
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons finely chopped celery
  • 2 tablespoons minced fresh parsley

Directions

  • Cut a thin slice off the top of each tomato. Scoop out and discard pulp; invert tomatoes onto paper towels to drain. In a small bowl, combine the bacon, mayonnaise, onions, cheese, celery and parsley. Spoon into tomatoes. Cover and refrigerate for at least 2 hours. Yield: 28 appetizers.

Make them all the time! Hubby approves and that's huge, beings he's the pickiest eater I know. But we make them in bigger tomatoes, and use them as a side dish instead.

i MADE THESE FOR MY GRANDDAUGHTER'S GRADUATION OPEN HOUSE AND EVERYONE THOUGHT THEY WERE SUPERB. I MADE OVER A HUNDRED FOR THE PARTY AND WE RAN OUT HALF WAY THROUGH.

These tiny bites tasted great, but are a pain to make. It was hard to scoop out the tomato seeds without break the tomato and even harder getting the filling inside the small opening. Looked nice on the appetizer table however.

These little bites are so perfect for summer entertaining! They can be made ahead, taste delicious, are easy to handle,and are even good the next day if there are ever any leftovers!

I made these BLT bites for a baby shower and boy did the guests love them. I actually had one guest go to the store and buy the ingredients so i could advise her how to make them that night for her daughters overnighter the next day. What a great concept. love it
